I consider myself quite the hostess with the mostest, taking after my mother of course. I’ve learned all of her tips and tricks over the years and have come to love having others over for any occasions. Whether it’s breakfast, brunch or birthdays parties, I have it all covered! One rule that my mama taught me that I will always follow is to always have more than enough food. There is nothing worse than having a delicious meal and there’s not enough to take seconds. 

Last weekend we had our friends over for a breakfast play date and I was so excited to try out some new recipes and hang with our kiddos too! 
With the help of Pinterest I was inspired to try some fun new breakfast foods that I’ve never tried before. This was not the normal healthy, paleo meal I would make on the daily. This was meant to be the ultimate cheat meal to fill our tummies on Sunday funday! 

The first thing I was thinking is that there has so be eggs, protein is very important because it helps keep me fuller longer. I decided that a crustless quiche was the way to go since we would accompany the meal with bagels and a French toast bake, YUM! Here is my fool proof quiche recipe: 

1 tablespoon olive oil

2 cloves garlic, minced

1/2 onion, chopped

5 ounces fresh spinach

6 eggs, beaten

2 cups shredded cheese

1 tablespoon dried parsley 

Salt and pepper to taste 

Sautée the onion and garlic in the olive oil until soft.  Add in the spinach and cook until wilted. Set aside to cool. Whisk eggs, cheeese, spices and herbs together. Take a pie dish or any round shallow dish and spray with nonstick spray. Combine the egg mixture with the spinach mixture into pie dish. Bake for 30-40 min. 


This quiche was so delicious and your kiddos will love it too! Mine called it pizza! It’s also a great way to add veggies into their diet without them knowing (insert evil laugh here). 

When having friends over just remember the more food the better, relax and enjoy your time with your company! Don’t be afraid to try out that new recipe and bring out some fun serving dishes so they don’t collect too much dust!
