When it comes to Mediterranean food, I’m a HUGE fan! I could eat hummus, Greek salad, gyro and the list goes on, every day! Lately I’ve been trying to eat at home more to be a bit more frugal and healthy so I’m getting creative with my lunch time meals. I’ve finally perfected my Greek salad recipe so I thought I would share it with all of you! I’ll start off by saying that the secret must have ingredient in this salad is absolutely the roasted chickpeas. While you can get away with buying them already roasted, I prefer having them fresh out of the oven!
There’s a couple of ways you can go about preparing your chickpeas. The first way requires soaking fresh chickpeas overnight, but ain’t no mama got time for that, so I went the quick and easy route with a can of chickpeas. I popped them into a bowl, poured a table spoon of olive oil over them, sprinkled a little garlic, salt and pepper and they were set to go into the oven set at 350 degrees.
Spread these babies out over a baking sheet (I prefer to line my sheet with parchment paper) pop them into the oven for 30 minutes and they are ready to consume!
For my perfect Greek salad I add in the following ingredients or whatever I can find in my fridge from this list:
Feta (I love the herb flavor for extra flavor)
Shredded chicken for added protein (a secret for this is Costco rotisserie chicken. If you don’t have one near by, I also crockpot chicken breast on low in Greek dressing)
I chop up all of the above ingredients and throw them into a bowl. I would give you measurements but they don’t matter so much in this recipe. Whatever your taste buds want, let them have!
Eating healthy at home can get really boring. Adding in a few creative salads in the mix can really spice up your meals and make healthy eating delicious and fun! Those chickpeas really pack in the crunch giving you a party in your mouth!
